Terrible 3s

I have nothing to say, except for after experiencing a few weeks of the terrible 3s, I am confident in saying there is no such thing as the terrible 2s.

And with that I am going to bed.

I feel like I was involved in a prison riot today.

Recipe Tuesday

I love enchiladas, I have been making my honey-lime enchiladas a lot and felt like I needed a change.

Cream Cheese Enchiladas

2 cups cooked and shredded chicken
4 oz. cream cheese
1-1/2 cups salsa (I used artichoke garlic salsa)
15 oz. can pinto beans, drained & rinsed
4 oz. can diced green chiles
10 oz. can mild (red) enchilada sauce
8-10 flour tortillas
1-2 cups Mexican style shredded cheese

Preheat oven to 350 degrees. In a large saucepan add salsa and cream cheese. Heat together on medium heat until cream cheese is completely melted. I find if you slice the cream cheese into very small, thin chunks it melts the easiest. Once cream cheese is melted stir in the chicken, green chiles and pinto beans. Remove from heat. Spray a 9x13 baking dish with cooking spray, then spread 1/2 cup of salsa in the bottom. Put 1/2 cup, give or take, of the chicken mixture down the center of each tortilla, roll up and place seam side down in the baking dish. Once all tortillas are filled, rolled and in the pan, pour the can of enchilada sauce all over the top and sprinkle with the cheese. Cover and bake for 20-25 minutes until heated.

I was able to get 8 enchiladas out of this. I also only used 1 cup of cheese, but use more if you like them cheesier on top.

Davis' 3 Year Check Up

Last week we had Davis' 3 year check up.

While getting measured he was very uncooperative, he kept bending, tipping his head, it was a little frustrating for the nurse so she just gave up and marked him as 39.5 inches tall.  Which I knew was off as I measure him at home.

But, I didn't care.

The doctor said Davis was looking very good, she was happy he was finally gaining weight and most of all, talking our ears off!!

She was really concerned about his runny nose, the nasal sound he has when he talks, the fact that he doesn't breath through his mouth, the dark circles under his eyes, etc...

All signs of allergies she said.

She suggested we see our ENT again, just in case his adenoids grew back and to get in with our allergist too.

Today we had our ENT appointment, Davis was so sweet, he even cooperated when they measured him so we were able to get his real height, not some guesstimate.

The ENT believes it is indeed allergies and said we can do testing right there in his office!

We will have those next week and go from there.

He said he will put him on some allergy medication once we complete the testing and if those don't help clear up his nasal passages that are swelled completely shut (this explains the mouth breathing and return of snoring) within 2 months that Davis will be scheduled for a nasal surgery.

Height: 41 inches
Weight: 34 lbs

Going Unplugged

I went all out over the weekend, I turned off the iPhone and computer and went old school for my sociology research project.

The first few hours were hard.

It was weird not grabbing my iPhone and checking FB updates every few hours, seeing what was new on Pinterest, being able to check my email whenever I wanted, not texting and not having the convenience of technology at my fingertips.

I used my land line all weekend long to talk.

I woke up Sunday morning and it was dead, I'm not used to using it and left it off the base.

I felt really refreshed though and I think I will be making a point to unplug at least once a week for 24 hours.

When I logged into FB Sunday night I then realized that the one thing I thought I'd miss the most, I didn't miss at all.

It was the same lame updates from the same people that always post useless information about themselves.

I'll still use FB, don't get me wrong, I love to be able to keep in touch with friends that live out of town, seeing pictures of friends and I love FB messaging.

However, useless status updates, done.

Logging in several times a day just to waste time reading useless information, done.

Here's to FB freedom!!!!

Mission: House Organization

I'm currently on a "get the house sale ready" kick.

As if we are putting the house up for sale next week or something.

Now that Davis is older and sleeping, I actually feel motivated to tackle things around the house we've let slip.

The closets, the storage area and random unfinished projects, you know like that one last piece of trim I never painted and painting the new doors we hung but never bothered painting, who does that?

All things that a realtor would probably tell us to do.

Even if we don't sell the house soon, at least they are done and we will feel like we are DONE with this house.

I started back in December going through things and packing them away for a garage sale.

I was anxiously awaiting a decent day and watching the weather like a hawk.

I had my garage sale on Friday.

I made A LOT of cash.  It was actually the most I've ever made and I'm still wondering what the heck I sold to make that much.

We used it to buy 4 new bar stools for our island that I've been eyeing since last summer.

We bought 5 new trees for the yard.

We bought Davis a car bed (used).

And I still have some leftover, not sure what that will be used for, maybe some mad money but probably for a new floor in the laundry room.

Saturday I got all motivated and tackled the utility room that is off our garage.

Holy crap.

It has never looked this good, you can actually see the floor and there are no more random pieces of dog food on the floor.

Today I tackled the linen closet.

The linen closet was terrible.

It was embarassing.

I hated getting in there.

Towels everywhere, all a mess.

Sheets tossed in, not folded correctly, not with their match.

Pure disaster.

Blankets we haven't used since before we met.

It was awful.

When I got everything out of there today I almost started crying after realizing how much stuff was actually in there.

It isn't a small closet either.

It was just so unorganized that it made it look and feel like there was no room.

I only got rid of 3 things I had stored in there.

Everything else went back in, but in storage totes and in a more organized fashion.

I now have an entire wall of shelves empty!!!!!

Yes, the closet that was packed full, both sides of shelves, not a room for even a penny, has an entire wall of shelves EMPTY!!!!!!!!!!

Bloody Beer

I've been a little vodka obsessed lately.

Martinis to be exact.

Yum!

Then my mom made her homeade bloody mary mix over the weekend and brought some over on Easter.

We like to drink on holidays.

She left it for me so I've had a couple of bloody marys this week before dinner.

I really wanted one tonight and realized the vodka is gone!!!!!!

What to do?

Mix a Yuengling with some bloody mary mix is what you do.

Twitter: What the heck?

I joined Twitter last week.

I did so because one of my favorite bloggers is quitting her blog.

She suggested she be followed on Twitter or as I like to call it, Twitty.

After being on Twitty, errr, I mean Twitter for one week I have decided it is about the most useless thing ever.

If I want to read status updates I will just check Facebook.

My advice, Facebook should just buy Twitter and put an end to it's misery.

I am not sure if I will ever fully *get* social media.

Weight Loss

I am really proud of where I have come in a year.

It has come off really slowly, but that is okay. Good things come to those who wait.

I am still working on losing some more weight, but I wanted to post a photo of me from a year ago and a photo of me from yesterday.

Also, please excuse the ridiculous amount of toys in the background.

And my apologies for the photo quality of my recent picture, it was taken with my iPhone, by my husband, who apparently doesn't know that he needs to wait for it to focus.

Thoughts About High School

When Davis found my yearbook last night, I looked through the entire thing.

After I was done, I realized what dorks all the people were that I thought were IT.  You know the ones, the cool girls, whose parents had lots of money, got to drive new cars, had all the designer clothes, got invited to all the dances and parties, had 100s of friends.  The girl I always wished I was.

They really were not all that now that I am looking back.

Why did my high school self think I was such a dork and unattractive?

It took me 15 years to realize I wasn't a dork and I wasn't unattractive.

I was just a simple, nice girl.

I wish I could go back in time and tell that girl that all those people that she thought to be 1000 times cooler than herself end up not being so cool 15 years later.

And the guys I thought were just so hot....ummmm....let's just say.....UGLY.

I graduated from high school in 1997.

15 years ago.

It seems like yesterday.


Sociology

I am taking Sociology 101 this semester.

We have to write a 3 page research paper, which really is nothing, seriously.

However, I hate writing even a short paragraph.

I hate it so much I would be wiling to pay someone to write this paper for me.

Any takers??

I didn't think so.

I am excited about the topic I chose though.

How technology and social media has affected society.

Think Facebook, Twitter, texting, blogging, cell phones, etc...

My instructor thinks it sounds marvelous.

I hope so.

2004 Called and Ralph Lauren Wants His Jacket Back

I am on a mission to de-clutter the house.

Not that we are hoarders, but you know what I mean.

We have things we hang on to, thinking we might use it and 5 years later it is still there, unused.

We would eventually like to sell our house sooner than later and lets face it, selling a house with closets that are packed isn't a good idea.

We want people to think we have lots of room, right?

So, let the de-cluttering begin.

Our local unlimited trash pickup is in a few weeks and I am planning a garage sale so it works out perfectly.

I took these pictures of my husband today, he is agreeing to get rid of the beloved Polo jacket he bought in 2004 and hasn't worn since I'd say, oh, 2007.

Good riddance.
